Ingredients:

- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional, for a little heat)
- Salt and pepper to taste

- 4-6 pita breads or flatbreads
- Shredded lettuce
- Diced tomatoes
- Sliced red onion
- Tzatziki sauce or garlic sauce (store-bought or homemade)
- In a large bowl, combine the chicken thighs, olive oil, cumin, coriander, paprika, cinnamon, garlic powder, cayenne pepper (if using), and a generous pinch of salt and pepper. Toss everything together until the chicken is evenly coated with the spice mixture.
- Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken thighs and cook for about 6-8 minutes per side, or until they're cooked through and nicely charred on the outside.
- Transfer the cooked chicken to a cutting board and let it rest for 5 minutes before slicing or shredding it into bite-sized pieces.
- While the chicken is resting, warm up your pita breads or flatbreads according to package instructions.
- To assemble the wraps, lay a pita or flatbread on a flat surface and add a generous portion of shredded lettuce, diced tomatoes, and sliced red onion.
- Top the veggies with a scoop of the shawarma-spiced chicken.
- Drizzle your desired amount of tzatziki sauce or garlic sauce over the top.
