Shawarma Stuffed Peppers

Shawarma Stuffed Peppers
Ingredients:
- 2 tablespoons olive oil or canola oil
- 1 yellow onion, chopped
- Kosher salt and black pepper
- 2 teaspoons Shawarma Seasoning, homemade (recipe follows) or store-bought
- 1 pound ground turkey
- 1 cup cooked basmati rice or 1 cup cauliflower rice
- One 14-ounce can diced tomatoes
- 4 large or 6 small bell peppers
- 1/4 cup tahini
- 1 lemon
- Fresh herbs (such as cilantro, parsley, or mint), for serving
- 2 tablespoons garam masala
- 2 tablespoons curry powder
- 1 tablespoon powdered chicken bouillon
- 2 teaspoons ground turmeric
- Heat olive oil in a large skillet over medium-high heat. Add chopped onions, season with salt, and cook until soft, about 5-7 minutes. Stir in Shawarma Seasoning and cook for another minute. Add ground turkey, season with salt and pepper, and cook until browned. Reduce heat to low.
- If using cauliflower rice, microwave it for 3 minutes. Add cooked rice (or cauliflower rice) to the skillet along with diced tomatoes. Adjust seasoning as needed.
- Cut off tops of bell peppers, remove cores, and place in a casserole dish. Fill peppers with turkey mixture and bake for 35 minutes.
- While peppers bake, prepare tahini sauce. Mix tahini with cold water, lemon juice, salt, and pepper until smooth.
- Once peppers are done, squeeze lemon juice over them, top with tahini sauce, and garnish with fresh herbs. Serve and enjoy!
