Ingredients:
For the Quesadillas:
- 6 large flour tortillas
- 2 cups shredded cooked chicken (rotisserie chicken works well)
- 2 cups shredded Mexican blend cheese
- 1 cup diced bell peppers (any color)
- 1 cup diced onions
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- Cooking spray or olive oil
For the Jalapeño Ranch:
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup chopped pickled jalapeños
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
For the Jalapeño Ranch:
- In a small bowl, mix together the mayonnaise, sour cream, pickled jalapeños, cilantro, lime juice, and minced garlic.
- Season with salt and pepper to taste.
- Cover and refrigerate until ready to serve.
For the Quesadillas:
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper and lightly coat it with cooking spray or olive oil.
- Lay out three tortillas on the baking sheet.
- Evenly distribute the shredded chicken, cheese, diced bell peppers, onions, tomatoes, and cilantro over the tortillas.
- Season with salt and pepper to taste.
- Top each tortilla with another tortilla to create quesadilla sandwiches.
- Lightly coat the top of each quesadilla with cooking spray or olive oil.
- Bake in the preheated oven for 8-10 minutes, or until the tortillas are golden brown and the cheese is melted.
- Remove from the oven and let cool for a few minutes before slicing into
