Shrikhand is a creamy, yogurt-based dessert flavored with cardamom and saffron. It's traditionally made by hanging strained yogurt in a muslin cloth to remove excess whey, resulting in a thick and luxurious texture. This recipe offers a simplified version that's just as delicious!
Ingredients:
- For the Shrikhand:
- 2 cups whole milk yogurt
- ½ cup granulated sugar
- ¼ cup powdered sugar
- ½ teaspoon ground cardamom
- Pinch of saffron threads
- 1 tablespoon chopped pistachios
- For the Garnish (optional):
- Additional chopped pistachios
- Rose petals
- Strain the Yogurt: In a fine-mesh sieve set over a bowl, strain the yogurt for at least 30 minutes, or until thickened. You can also use a cheesecloth for straining.
- Whisk the Shrikhand: In a large bowl, whisk together the strained yogurt, granulated sugar, powdered sugar, and cardamom until smooth and creamy.
- Bloom the Saffron: In a small bowl, soak the saffron threads in 1 tablespoon of warm water for 10 minutes. This will help release their flavor and color.
- Stir the saffron and its soaking liquid into the shrikhand. Fold in the chopped pistachios.
- Cover the bowl and refrigerate the shrikhand for at least 2 hours, or until chilled.
- To serve, spoon the shrikhand into individual bowls or a serving dish. Garnish with additional chopped pistachios and rose petals, if desired. Enjoy!
