Shrimp & Avocado Mango Salad
Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 ripe mango, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cup baby spinach
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tbsp honey
- 1 tsp smoked paprika
- Salt and pepper to taste
- Optional: crumbled feta cheese for topping
- Cook the Shrimp:
- In a medium bowl, mix the shrimp with olive oil, smoked paprika, salt, and pepper.
- Heat a skillet over medium-high heat. Cook the shrimp for about 2-3 minutes on each side, or until pink and opaque. Remove from heat and let cool.
- Prepare the Dressing:
- In a small bowl, whisk together lime juice, honey, and a pinch of salt.
- Assemble the Salad:
- In a large bowl, combine the baby spinach, diced mango, avocado, cherry tomatoes, and red onion.
- Add the cooked shrimp and drizzle with the lime dressing. Toss gently to combine.

- Top with chopped cilantro and crumbled feta cheese if desired.
