Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 can (14 ounces) diced tomatoes
- 1/2 cup heavy cream or coconut cream
- 1/4 cup plain yogurt (optional)
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Sauté Chicken: Heat the butter and vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and ginger, and cook for another minute until fragrant.
- Add Spices: Stir in the ground cumin, ground coriander, turmeric powder, paprika, and cayenne pepper. Cook for 1-2 minutes, stirring constantly, until the spices are toasted and aromatic.
- Simmer Sauce: Add the diced tomatoes (with their juices) to the skillet. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.
- Blend Sauce: Use an immersion blender or transfer the sauce to a blender and blend until smooth.
- Finish Dish: Return the cooked chicken to the skillet. Stir in the heavy cream or coconut cream and plain yogurt (if using). Season with salt and pepper to taste. Simmer for another 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Serve: Garnish with chopped fresh cilantro and serve hot with rice or naan bread.
