Ingredients:

  • 500g shrimp, peeled and deveined
  • 1 large tomato, quartered
  • 1 onion, quartered
  • 2-3 pieces green chili peppers (siling haba), optional
  • 1 radish, peeled and sliced
  • 1 eggplant, sliced
  • 1 bunch kangkong (water spinach) or spinach, leaves separated from stems
  • 1 packet (40g) sinigang mix (tamarind soup base)
  • 8 cups water
  • Fish sauce (patis) or salt, to taste
  • Freshly ground black pepper, to taste
  • Cooked rice, for serving
Instructions:

  1. In a large pot, bring the water to a boil. Add the tomatoes, onions, and green chili peppers. Simmer for about 5 minutes or until the tomatoes start to soften and release their juices.
  2. Add the radish and eggplant to the pot. Let it simmer for another 5 minutes or until the vegetables start to soften.
  3. Stir in the sinigang mix until dissolved, then add the shrimp to the pot. Cook for 3-5 minutes or until the shrimp turn pink and opaque.
  4. Season the soup with fish sauce or salt and freshly ground black pepper to taste.
  5. Add the kangkong or spinach leaves to the pot and cook for 1-2 minutes until wilted.
  6. Taste the soup and adjust the seasoning if necessary.
  7. Serve hot with steamed rice.
