- 500g shrimp, peeled and deveined
- 1 large tomato, quartered
- 1 onion, quartered
- 2-3 pieces green chili peppers (siling haba), optional
- 1 radish, peeled and sliced
- 1 eggplant, sliced
- 1 bunch kangkong (water spinach) or spinach, leaves separated from stems
- 1 packet (40g) sinigang mix (tamarind soup base)
- 8 cups water
- Fish sauce (patis) or salt, to taste
- Freshly ground black pepper, to taste
- Cooked rice, for serving
- In a large pot, bring the water to a boil. Add the tomatoes, onions, and green chili peppers. Simmer for about 5 minutes or until the tomatoes start to soften and release their juices.
- Add the radish and eggplant to the pot. Let it simmer for another 5 minutes or until the vegetables start to soften.
- Stir in the sinigang mix until dissolved, then add the shrimp to the pot. Cook for 3-5 minutes or until the shrimp turn pink and opaque.
- Season the soup with fish sauce or salt and freshly ground black pepper to taste.
- Add the kangkong or spinach leaves to the pot and cook for 1-2 minutes until wilted.
- Taste the soup and adjust the seasoning if necessary.
- Serve hot with steamed rice.
