Ingredients:
- 1 lb (450g) mushrooms, cleaned and sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon honey (or maple syrup for vegan)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
3. Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they begin to release their juices and soften, about 5-7 minutes.
4. In a small bowl, whisk together the balsamic vinegar, soy sauce, and honey.
5. Pour the balsamic mixture over the mushrooms in the skillet and stir to coat evenly.
6. Continue cooking the mushrooms for an additional 3-4 minutes, or until they are tender and glazed with the balsamic mixture.
