Ingredients:

  • 2 cans Pillsbury Cinnamon Rolls (8-ct each)
  • ½ cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup chopped pecans (optional)
Instructions:

  1. In a small bowl or gallon-sized bag, mix together the granulated sugar and cinnamon.
  2. Melt the butter in a glass bowl, then stir in the brown sugar until well combined.
  3. Line your 5-7 quart slow cooker with parchment paper or spray with coconut oil cooking spray.
  4. Cut the cinnamon rolls into quarters and place them into the bag with the sugar-cinnamon mixture. Seal and shake to coat the pieces.
  5. Arrange half of the coated cinnamon roll pieces in the bottom of the slow cooker.
  6. Drizzle half of the butter-brown sugar mixture over the first layer. Add the remaining cinnamon roll pieces and top with the rest of the butter mixture.
  7. Place 3 sheets of paper towels over the slow cooker before putting on the lid to catch any moisture.
  8. Cook on low for 2 hours, checking after 1 hour. If the edges are brown and the center is gooey, perform the toothpick test to check for doneness.
  9. Turn off the slow cooker and let the rolls sit for 5 minutes.
  10. Drizzle with the icing that came with the cinnamon rolls and enjoy!

Yum! I think a quick glaze made from powdered sugar and milk would be the perfect finishing touch. Though, if you like a bit of crunch, a sprinkle of chopped pecans on top before serving could be great. 😋
