Ingredients:
- 3 pounds beef chuck roast
- 1 packet Italian salad dressing mix
- 1 packet au jus gravy mix
- 1 cup beef broth
- 1 jar (16 oz) pepperoncini peppers, undrained
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon black pepper
- 6-8 sandwich rolls or hoagie buns
- Sliced provolone or mozzarella cheese (optional)
- Giardiniera (optional, for an extra kick!)
Instructions:
- Prep the Beef: Start by placing your beef chuck roast into the slow cooker. This is the star of the show, so make sure it’s nice and comfy in there!
- Season and Flavor: Sprinkle the Italian salad dressing mix and au jus gravy mix over the beef. Pour in the beef broth and the entire jar of pepperoncini peppers (liquid and all!). This is where all those incredible flavors come from.
- Spice it Up: Add the minced garlic, dried oregano, dried basil, dried parsley, and black pepper to the slow cooker. Give everything a little stir to mix those seasonings in.
- Slow Cook Magic: Cover the slow cooker and set it to low. Let it cook for 8-10 hours, or until the beef is super tender and easy to shred. You can also cook it on high for 4-5 hours if you’re in a hurry, but low and slow is the way to go for maximum flavor.
- Shred the Beef: Once the beef is done, use two forks to shred it right in the slow cooker. Make sure it’s all mixed in with those delicious juices and peppers.
- Assemble the Sandwiches: Preheat your oven to broil. Slice the sandwich rolls or hoagie buns in half and place them on a baking sheet. Pile the shredded beef onto the bottom half of each roll. If you’re a cheese lover, add a slice of provolone or mozzarella on top of the beef.
- Broil and Serve: Place the baking sheet in the oven and broil for 1-2 minutes, just until the cheese is melted and bubbly. Keep an eye on it so it doesn’t burn!
