Ingredients:
- 1 pork tenderloin (about 1-1.5 lbs)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground black pepper
- 1 tsp salt
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Preheat your smoker to 225°F (110°C).
- In a small bowl, combine olive oil, garlic, smoked paprika, black pepper, salt, thyme, and rosemary.
- Rub this mixture all over the pork tenderloin.
- Place the tenderloin in the smoker and smoke for about 2-3 hours or until the internal temperature reaches 145°F (63°C).
- Remove from the smoker and let it rest for 10 minutes before slicing.
