Soba - Buckwheat Noodles Recipe:

Ingredients:
- 200g dried soba noodles
- 4 cups dashi broth (for hot soba) or 1/2 cup soy sauce, 1/2 cup mirin, 1 cup dashi (for cold dipping sauce)
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/2 cup dashi broth
- Toppings: sliced green onions, nori strips, grated daikon, or tempura

1. Cook soba noodles according to package instructions, then rinse under cold water to stop the cooking process.

4. Top with green onions, nori strips, grated daikon, or tempura as desired.
