Soft Caramel Candies Recipe
Ingredients:
- 1 cup (2 sticks) unsalted butter
- 2 1/4 cups packed light brown sugar
- 1 cup light corn syrup
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- Prepare Your Pan: Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Lightly grease the parchment paper.
- Melt the Butter: In a heavy-bottomed saucepan, melt the butter over medium heat. Once melted, stir in the brown sugar, corn syrup, and sweetened condensed milk until well combined.
- Heat and Stir: Bring the mixture to a boil over medium heat, stirring constantly. Attach a candy thermometer to the side of the pan. Continue stirring and cooking until the mixture reaches 245°F (118°C), about 10-15 minutes. This is the perfect temperature for soft caramels.
- Remove from Heat: Once the caramel reaches the desired temperature, remove the saucepan from the heat. Stir in the vanilla extract and salt until fully incorporated.
- Pour and Cool: Carefully pour the hot caramel into the prepared baking pan, spreading it evenly. Let it cool at room temperature for about 2 hours, or until completely set.
- Cut and Wrap: Once the caramel has set, use the parchment paper to lift it out of the pan. Place the caramel on a cutting board and cut it into small squares or rectangles with a sharp knife. Wrap each piece in wax paper or cellophane to keep them from sticking together.
