- 1 small green papaya, peeled and shredded
- 1 cup cherry tomatoes, halved
- 1 cup green beans, cut into 1-inch pieces
- 2-3 Thai chilies, finely chopped (adjust to taste)
- 2-3 cloves garlic, minced
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp palm sugar or brown sugar
- 2 tbsp roasted peanuts, crushed
- Fresh cilantro leaves, for garnish
- Fresh lettuce leaves, for serving
- In a large mortar or bowl, pound Thai chilies and garlic into a rough paste using a pestle.
- Add shredded green papaya and pound gently to bruise slightly.
- Add cherry tomatoes, green beans, fish sauce, lime juice, and sugar. Mix well using a spoon or pestle.
- Taste and adjust the seasoning, adding more fish sauce, lime juice, or sugar if needed.
- Transfer the salad to a serving plate lined with fresh lettuce leaves. Sprinkle with crushed roasted peanuts and garnish with fresh cilantro leaves.
