- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set it aside, leaving the bacon grease in the pot.
- In the same pot with the bacon grease, add the chopped onion. Cook until softened and translucent, about 5 minutes.
- Add the minced garlic to the pot and cook for an additional minute, until fragrant.
- Pour the chicken broth into the pot, scraping up any browned bits from the bottom with a wooden spoon.
- Stir in the apple cider vinegar, brown sugar, and red pepper flakes (if using). Season with salt and pepper to taste.
- Add the chopped collard greens to the pot, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1 to 1 1/2 hours, stirring occasionally, until the collard greens are tender.
- Once the collard greens are tender, stir in the cooked bacon pieces. Taste and adjust seasoning if needed.
