- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 8 ounces Spanish chorizo, sliced
- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken or vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add minced garlic and diced red bell pepper, and cook for another 2 minutes.
- Stir in the sliced Spanish chorizo and cook until it starts to brown and release its oils, about 3-4 minutes.
- Add the drained and rinsed chickpeas, diced tomatoes (with their juices), chicken or vegetable broth, smoked paprika, and cumin to the pot. Season with salt and pepper to taste. Bring the stew to a simmer and let it cook for about 15-20 minutes, stirring occasionally, until the flavors meld together and the stew thickens slightly.
- Once the stew is ready, taste and adjust the seasoning if needed. Serve hot, garnished with freshly chopped parsley, and with some crusty bread on the side for dipping and sopping up the delicious flavors.
