- 1 whole chicken (3-4 lbs)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp paprika
- Salt and pepper to taste
- 1 lemon, sliced
Instructions:
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare Chicken: Place the chicken breast-side down on a cutting board. Using kitchen shears, cut along both sides of the backbone to remove it. Flip the chicken over and press down firmly on the breastbone to flatten it.
- Season Chicken: In a small bowl, mix olive oil, garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture all over the chicken, making sure to get under the skin.
- Arrange Chicken: Place the chicken on a baking sheet, skin-side up. Arrange lemon slices around it.
- Roast: Roast in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
