Looking for a healthy, flavorful meal? These cauliflower and chickpea tacos are a delicious plant-based option! 🌮🥑

Ingredients:​

  • 1 small cauliflower (cut into florets) 🥦
  • 1 can chickpeas (drained) 🧆
  • 2 tbsp olive oil 🫒
  • 1 tsp cumin 🌿
  • 1 tsp smoked paprika 🌶️
  • Corn tortillas 🌽
  • Avocado and salsa for topping 🥑🍅

Instructions:​

  1. Toss cauliflower and chickpeas with olive oil, cumin, and paprika.
  2. Roast at 400°F for 25 minutes.
  3. Serve in tortillas with avocado and salsa.
