A Cozy Breakfast Treat

Craving a warm, comforting breakfast that’s easy to make and bursting with fall flavors? This Spiced Apple and Walnut Baked Oatmeal is your new go-to! Packed with wholesome oats, crunchy walnuts, and spiced apples, it’s perfect for a cozy morning at home or meal prep for busy weekdays.

Ingredients:​

  • 2 cups old-fashioned rolled oats
  • 1/2 cup walnuts, chopped
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 cups milk of choice
  • 1/4 cup honey (or maple syrup)
  • 1 large egg, beaten
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 cup diced apples (any sweet variety)
  • Extra apple slices and walnuts for topping

Instructions:​

  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. Combine oats, half the walnuts, baking powder, cinnamon, nutmeg, and salt in a bowl.
  3. In another bowl, whisk together milk, honey, egg, melted butter, and vanilla extract.
  4. Stir the wet mixture into the dry ingredients, then fold in the diced apples.
  5. Pour the mixture into the prepared baking dish and top with extra apple slices and walnuts.
  6. Bake for 35-40 minutes, or until the top is golden and the oatmeal is set. Let cool for 5 minutes before serving.
This dish is perfect for breakfast or brunch and tastes great with a drizzle of honey or a dollop of Greek yogurt.
