- ½ cup unsalted butter, softened
- ½ cup white sugar
- 1 large egg
- 1 cup molasses (avoid blackstrap)
- 2 ½ cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup hot water
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
- In a large bowl, beat the softened butter with an electric mixer until creamy.
- Add the sugar and continue to beat until light and fluffy, about 3 minutes. Mix in the egg, then add the molasses, blending until smooth.
- In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Gradually incorporate the dry ingredients into the molasses mixture, mixing after each addition. Once combined, stir in the hot water until smooth.
- Pour the batter into the prepared pan.
- Bake for 30 minutes. Check for doneness by inserting a toothpick into the center of the cake; it should come out clean. If needed, bake for an additional 15-30 minutes, checking frequently.
