Spiced Pumpkin Chickpea Stew
Ingredients:
- 2 cups pumpkin puree (canned or homemade)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp smoked paprika
- 1/4 tsp ground turmeric
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add garlic and ginger, and cook for another 2 minutes until fragrant.
