Ingredients:​

  • 1/4 cup thinly sliced red onion
  • 1-2 red chilies, sliced (adjust to taste)
  • 1/4 cup chopped roasted peanuts (optional, for added crunch)

For the Dressing:​

  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or sugar (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon chili paste or Sriracha (adjust to taste)
  • 1 tablespoon lime juice (optional, for extra tanginess)

Instructions:​

1. Prepare the Bamboo Shoots:​

  1. If using canned bamboo shoots:
    • Drain and rinse them under cold water. Slice them thinly if not already sliced.
  2. If using fresh bamboo shoots:
    • Peel and slice them thinly. If the bamboo shoots are raw, boil them in water for about 20-30 minutes until tender, then drain and let cool before using.

2. Prepare the Vegetables:​

  1. Mix the Vegetables:
    • In a large bowl, combine the sliced bamboo shoots, shredded carrots, thinly sliced cucumber, chopped cilantro, red onion, and sliced red chilies.

3. Make the Dressing:​

  1. Combine Ingredients:
    • In a small bowl or jar, whisk together the rice vinegar, soy sauce, fish sauce (if using), sesame oil, honey (or sugar), minced garlic, minced ginger, chili paste (or Sriracha), and lime juice (if using).
  2. Adjust Seasoning:
    • Taste the dressing and adjust the sweetness or spiciness to your preference.

4. Toss the Salad:​

  1. Mix the Salad and Dressing:
    • Pour the dressing over the bamboo shoot mixture and toss well to coat all the ingredients evenly.
  2. Add Peanuts:
    • If using roasted peanuts, sprinkle them on top just before serving for added crunch.

5. Serve:​

  1. Chill and Serve:
    • Let the salad sit for about 15-20 minutes to allow the flavors to meld. Serve chilled or at room temperature.
