- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned)
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sriracha (adjust to taste)
- 2 cloves garlic, minced
- 1 tsp ground ginger
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
- Marinate the chicken: In a bowl, mix together olive oil, soy sauce, honey, sriracha, garlic, ground ginger, salt, and pepper. Add the chicken pieces and toss to coat. Marinate for at least 30 minutes.
- Prepare the skewers: Thread the marinated chicken and pineapple chunks alternately onto skewers.
- Grill or bake: Preheat your grill to medium-high heat or your oven to 400°F (200°C). Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If baking, place the skewers on a baking sheet and bake for 15-20 minutes, flipping halfway through.
- Garnish and serve: Remove from the grill or oven and garnish with fresh cilantro. Serve with lime wedges for an extra burst of flavor.
