- 1 can (15 oz) chickpeas, drained and rinsed
- 2 red bell peppers, roasted and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp sriracha sauce (adjust to taste)
- Juice of 1 lemon
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- Prepare the Dressing: In a small bowl, whisk together olive oil, sriracha, lemon juice, smoked paprika, salt, and pepper.
- Combine Ingredients: In a large bowl, toss chickpeas, roasted red peppers, cherry tomatoes, cucumber, and red onion.
