Spicy Stir Fried Pork

Ingredients:
  • 1 lb (450g) pork loin or pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon chili garlic sauce (adjust to taste for desired level of spiciness)
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 green onions, chopped for garnish
  • Cooked rice, for serving
Instructions:
  1. In a bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and chili garlic sauce. Add the thinly sliced pork to the mixture and let it marinate for at least 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, and cook for about 1 minute until fragrant.
  3. Add the marinated pork to the skillet and stir-fry for 3-4 minutes until the pork is cooked through and slightly caramelized.
  4. Add the sliced onion and bell pepper to the skillet and continue to stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  5. Taste the stir-fry and adjust the seasoning if needed by adding more soy sauce or chili garlic sauce according to your preference.
  6. Once everything is cooked through and the flavors have melded, remove the skillet from heat.
  7. Serve the spicy stir-fried pork hot over cooked rice, garnished with chopped green onions.

I remember my grandmother doing this recipe for me every time I woke up. I really miss her, I will try this one just to remember her.
