  • 4 Sweetango apples, peeled, cored, and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • 1 teaspoon fresh ginger, grated (or 1/2 teaspoon ground ginger)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk (optional for creaminess)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions​

  1. Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Add Apples and Spices: Add the diced Sweetango apples, cinnamon, and cayenne pepper. Stir to combine and cook for about 5 minutes, letting the apples soften slightly.
  3. Add Broth: Pour in the vegetable or chicken broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, until the apples are tender.
  4. Blend: Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  5. Add Coconut Milk: If using, stir in the coconut milk for added creaminess. Heat gently over low heat and season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with fresh cilantro or parsley if desired.
