A tasty and straightforward spinach and feta omelet is one of my go-to morning dishes. It's the ideal way to start the day on a delightful note since it's full of taste and nutrition! This is how to prepare it:

Ingredients:
- 2 large eggs
- 1/4 cup fresh spinach leaves, chopped
- 2 tablespoons crumbled feta cheese
- Salt and pepper to taste
- 1 teaspoon olive oil or butter
- Crack the eggs into a bowl and beat them gently with a fork until well combined. Season with salt and pepper to taste.
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Once the oil is hot, add the chopped spinach to the skillet and sauté for 1-2 minutes until wilted.
- Pour the beaten eggs into the skillet, swirling them around to evenly coat the bottom.
- Allow the eggs to cook undisturbed for a minute or two until the edges start to set.
- Sprinkle the crumbled feta cheese evenly over one-half of the omelet.
- Using a spatula, carefully fold the other half of the omelet over the filling to create a half-moon shape.
- Cook for another minute or so until the eggs are fully set and the cheese is melted.
- Slide the omelet onto a plate and serve hot, garnished with additional salt and pepper if desired.
