- 1/2 cup milk or cream
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: 1/4 teaspoon red pepper flakes for a bit of heat

- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Vegetables:
- In an oven-safe skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the garlic and cook for another 30 seconds, until fragrant.
- Stir in the spinach and cook until wilted, about 2 minutes. Remove from heat.
- Prepare the Egg Mixture:
- In a large bowl, whisk together the eggs and milk or cream.
- Stir in the crumbled feta cheese, grated Parmesan cheese, salt, pepper, and red pepper flakes if using.
- Combine and Cook:
- Pour the egg mixture over the cooked vegetables in the skillet. Stir gently to combine.
- Cook on the stove over medium heat for about 3-4 minutes, until the edges start to set.
- Bake the Frittata:
- Transfer the skillet to the preheated oven.
