Ingredients
  • 1 tablespoon olive oil

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 6 large eggs
  • 1/2 cup milk or cream
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon red pepper flakes for a bit of heat

Instructions​

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Vegetables:
    • In an oven-safe skillet, heat the olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the garlic and cook for another 30 seconds, until fragrant.
    • Stir in the spinach and cook until wilted, about 2 minutes. Remove from heat.
  3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs and milk or cream.
    • Stir in the crumbled feta cheese, grated Parmesan cheese, salt, pepper, and red pepper flakes if using.
  4. Combine and Cook:
    • Pour the egg mixture over the cooked vegetables in the skillet. Stir gently to combine.
    • Cook on the stove over medium heat for about 3-4 minutes, until the edges start to set.
  5. Bake the Frittata:
    • Transfer the skillet to the preheated oven.
    • Bake for 15-20 minutes, or until the frittata is set in the center and lightly golden on top.
  6. Serve:
    • Let the frittata cool slightly before slicing. Enjoy warm or at room temperature.
