Ingredients:
- 1 lb (450g) flank steak, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- Salt and pepper, to taste
- 1 cup cooked rice
- 1 avocado, sliced
- Fresh cilantro, chopped, for garnish
For the Lime Crema:
- 1/4 cup sour cream
- 1 tbsp lime juice
- Zest of 1 lime
- Salt, to taste
Instructions:
- Marinate the Steak: In a bowl, toss the thinly sliced steak with 1 tbsp olive oil, fajita seasoning, salt, and pepper. Let it marinate while you prepare the veggies.
- Cook the Veggies: Heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and red onion, cooking until they’re tender and slightly charred, about 5-7 minutes. Remove from the skillet and set aside.
- Cook the Steak: In the same skillet, add the marinated steak slices. Cook for 2-3 minutes on each side until they’re nicely seared and cooked to your liking.
- Make the Lime Crema: In a small bowl, mix together the sour cream, lime juice, lime zest, and a pinch of salt. Stir until smooth and creamy.
- Assemble the Bowl: Divide the cooked rice into bowls, top with the sautéed veggies and steak strips, then add slices of avocado. Drizzle with the lime crema and garnish with fresh cilantro for a burst of freshness.
