Ingredients:
- 1 lb flank steak, thinly sliced
- 1 tbsp olive oil
- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced
- Salt and pepper, to taste
- Optional: 1 tsp chili powder, 1 tsp cumin powder
- 8 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- Optional toppings: salsa, sour cream, guacamole
- Cook the Steak:
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- Season thinly sliced flank steak with salt, pepper, chili powder, and cumin powder (if using).
- Cook steak in the skillet for 3-4 minutes until browned and cooked through.
- Remove steak from skillet and set aside.
- Prepare the Vegetables:
- In the same skillet, add a bit more olive oil if needed.
- Add thinly sliced bell pepper and onion to the skillet.
- Season with salt and pepper.
- Cook for 5-7 minutes until vegetables are tender and lightly caramelized.
- Remove vegetables from skillet and set aside.
- Assemble the Quesadillas:
- Wipe the skillet clean or use a separate large skillet.
- Place one flour tortilla in the skillet over medium heat.
- Sprinkle a generous amount of shredded cheese evenly over the tortilla.
- Layer cooked steak slices and cooked vegetables over half of the tortilla.
- Add another layer of shredded cheese on top of the steak and vegetables.
- Fold the empty half of the tortilla over the filling, forming a half-moon shape.
- Press down gently with a spatula and cook for 2-3 minutes per side, or until tortilla is golden brown and cheese is melted.
- Repeat with remaining tortillas and filling.
- Serve:
- Remove quesadillas from skillet and let them cool slightly on a cutting board.
- Cut each quesadilla into wedges.
- Serve warm with optional toppings such as salsa, sour cream, or guacamole.
