Here's a simple recipe for Steamed Pompano:

Ingredients:

  • 1 whole pompano fish, cleaned and scaled
  • 2 cloves garlic, minced
  • 1 thumb-sized ginger, sliced thinly
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cooking oil
  • Salt and pepper to taste
  • Sliced scallions and cilantro for garnish (optional)
Instructions:

  1. Make several diagonal cuts on both sides of the pompano fish to allow the flavors to penetrate.
  2. In a small bowl, mix together minced garlic, sliced ginger, soy sauce, oyster sauce, sesame oil, and cooking oil.
  3. Rub the marinade mixture all over the pompano fish, including the inside cavity. Let it marinate for about 20-30 minutes.
  4. Prepare a steamer by bringing water to a boil over high heat.
  5. Once the water is boiling, place the marinated pompano fish on a heatproof plate or steaming tray.
  6. Place the plate or tray in the steamer, cover, and steam the pompano fish for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Once the pompano fish is cooked, remove it from the steamer and transfer it to a serving platter.
  8. Garnish with sliced scallions and cilantro, if desired.
  9. Serve hot with steamed rice and your favorite dipping sauce, such as soy sauce with calamansi or lemon juice.
