Ingredients:​

  • 1 whole seabass, about 1.5 kg, cleaned and scaled
  • 2-3 limes, thinly sliced
  • 3-4 stalks lemongrass, bruised
  • 4-5 kaffir lime leaves
  • 3 cloves garlic, thinly sliced
  • 1-inch piece of ginger, thinly sliced
  • 2-3 red chili peppers, sliced (optional, for heat)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Vegetable oil for drizzling

Instructions:​

  1. Prepare the Seabass:
    • Rinse the seabass under cold running water and pat dry with paper towels.
    • Make 2-3 diagonal slashes on each side of the seabass, cutting through to the bone. This will help the fish to cook evenly and allow the flavors to penetrate.
  2. Marinate the Seabass:
    • In a small bowl, mix together the soy sauce, fish sauce, brown sugar, sliced garlic, and sliced ginger.
    • Rub the marinade all over the seabass, including inside the slashes and cavity. Allow the fish to marinate for at least 30 minutes, or up to 1 hour in the refrigerator.
  3. Prepare the Steaming Setup:
    • Place a steaming rack in a large steaming pot or wok. Add enough water to the pot, making sure it doesn't touch the bottom of the steaming rack.
    • Arrange half of the lime slices, lemongrass stalks, and kaffir lime leaves on the steaming rack. These will serve as a bed for the fish.
  4. Steam the Seabass:
    • Place the marinated seabass on top of the lime slices, lemongrass, and kaffir lime leaves.
    • Scatter the remaining lime slices, lemongrass, and kaffir lime leaves over the fish.
    • If using chili peppers, scatter them over the fish as well for extra heat.
    • Cover the steaming pot or wok with a lid and steam the seabass over medium-high heat for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Serve:
    • Carefully transfer the steamed seabass to a serving platter.
    • Drizzle some vegetable oil over the fish.
    • Garnish with fresh cilantro leaves.
    • Serve hot with steamed rice and your favorite vegetables.
