Sticky Chicken Pineapple

For the chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
For the sticky pineapple sauce:

  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 cup pineapple chunks (fresh or canned)

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the pineapple juice, soy sauce, honey, and minced garlic. Stir to combine and bring to a simmer.
  4. In a small bowl, mix the cornstarch and water until smooth. Add the cornstarch mixture to the skillet and stir until the sauce thickens, about 2-3 minutes.
  5. Return the chicken to the skillet and add the pineapple chunks. Cook for another 2-3 minutes, stirring occasionally, until the chicken is coated in the sauce and the pineapple is heated through.
  6. Serve the sticky chicken pineapple over rice or noodles, and enjoy!
