- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 8 oz (225 g) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
Instructions
- Prepare the Crust:
- In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of mini muffin tin cups or silicone molds to form a crust. Chill in the refrigerator while you prepare the filling.
- Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese with the sugar until smooth and creamy.
- Add the vanilla extract and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Assemble the Bites:
- Spoon or pipe the cheesecake filling onto the chilled crusts.
- Smooth the tops and refrigerate for at least 2 hours to set.
- Prepare the Strawberry Topping:
- In a small bowl, toss the sliced strawberries with the sugar. Let sit for about 10 minutes to macerate and release their juices.
- Serve:
- Top each cheesecake bite with a few slices of strawberry before serving.
