Ingredients:​

  • 2 cups shredded unsweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1/4 cup coconut oil (or unsalted butter), melted
  • 1/4 cup freeze-dried strawberry powder (or you can blend freeze-dried strawberries into a powder)
  • 1/2 tsp vanilla extract (optional)
  • A pinch of salt

Instructions:​

  1. Prepare the Mixture: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, melted coconut oil, strawberry powder, vanilla extract (if using), and a pinch of salt. Mix until everything is well combined and the coconut is evenly coated.
  2. Form the Candy: Using your hands or a small cookie scoop, form the mixture into small balls or press it into a lined baking dish to create bars. If making bars, press the mixture down firmly into the dish.
  3. Chill: Place the formed candies on a plate or in the baking dish and refrigerate for at least 1 hour to firm up.
  4. Serve: Once set, remove the candies from the refrigerator. If you pressed the mixture into a dish, cut it into squares or rectangles.
  5. Optional - Additional Coating: For extra flair, you can roll the truffles in additional shredded coconut or dip them in melted white chocolate before chilling again.
