- 3 tablespoons cornstarch (21 grams)
- 3 ounces strawberry Jell-O mix (85 grams, 1 box)
- 1 (9-inch) pie crust (213 grams, store-bought or homemade)
- 1 pint fresh strawberries (454 grams), quartered
- Whipped cream (optional, for serving)
- Kitchen Scale (optional)
- In a small saucepan, combine the cold water, sugar, and cornstarch. Bring to a gentle boil, whisking constantly, until the sugar dissolves and the mixture thickens. Remove from heat and stir in the Jell-O mix until fully dissolved. Let it cool slightly.
- Bake the pie crust according to package instructions, or use a pre-baked or graham cracker crust if preferred. Allow it to cool. Arrange the quartered strawberries evenly on the bottom of the crust.
