Hey everyone, glad to be here today and share with you about Strawberry Mochi (Ichigo Daifuku) – a unique Japanese dessert that represents the feeling of spring. When the season arrives, Japanese confectionery stores display this strawberry dessert consisting of one whole strawberry covered in soft mochi and red bean paste. If you are a lover strawberries of honey, red bean jam , and sticky mochi , then it's hard to give this recipe a miss. The classic Japanese confectionary, Daifuku, contains a soft and chewy mochi filled with different types of filling just like every fellow Japanese would want. Our recipe is grounded on the beloved taste of this all-time favorite with a fresh breath of strawberry's included, thus making every bite a spring pleasure.

Ingredients:
- 6 small strawberries
- 5.3 oz sweet red bean paste (anko)
- Potato starch or cornstarch (for dusting)
For the Mochi:
- 3/4 cup shiratamako (glutinous rice flour/sweet rice flour)
- 2 tablespoons sugar
- 3/4 cup water
Instructions:
- Prepare the strawberries by rinsing, drying, and hulling them. Divide the sweet red bean paste into 6 balls and wrap each strawberry with one ball of anko, leaving the tip of the strawberry uncovered.
- In a microwave-safe bowl, whisk together shiratamako and sugar. Slowly add water while stirring until you get a thick mixture.
- Microwave the mixture for 1 minute, then mix well. Repeat microwaving for another minute, then 30 seconds more until the mixture becomes translucent.
- Dust a tray with potato starch or cornstarch. Transfer the mochi onto the tray and fold it once to reduce stickiness. Divide the mochi into 6 pieces.
- Dust your hands with starch, flatten each mochi piece into a 3-inch round, and place an anko-covered strawberry on top. Gather the edges of the mochi to cover the strawberry completely, then twist and close the seam.
- Shape the mochi into a round ball with the strawberry tip pointing up. Repeat for the remaining strawberries.
