Ingredients:
For the Filling:- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped into 1-inch pieces
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp cinnamon (optional)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Filling: In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and salt. Toss until the fruit is evenly coated.
- Prepare Topping: In a separate bowl, mix the oats, flour, brown sugar, and cinnamon (if using). Cut in the cold butter with a pastry blender or fork until the mixture resembles coarse crumbs.
- Assemble: Transfer the fruit mixture to a greased 8x8-inch baking dish. Sprinkle the oat topping evenly over the fruit.
- Bake: Bake in the preheated oven for 35-45 minutes, or until the topping is golden brown and the filling is bubbling.
- Cool: Let the crisp cool slightly before serving.
