I recently tried making stuffed acorn squash, and it turned out to be a comforting, hearty dish that's perfect for a cozy dinner. Ingredients:​

  • 2 acorn squashes, halved and seeds removed
  • 1 lb ground sausage (or turkey, for a lighter option)
  • 1 small onion, diced

  • 1 apple, peeled and diced
  • 1/2 cup dried cranberries
  • 1/2 cup cooked quinoa or rice
  • 1/4 cup pecans, chopped
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:​

  1. Roast the Squash: Preheat your oven to 400°F (200°C). Drizzle the acorn squash halves with olive oil, then sprinkle with salt and pepper. Place them cut side down on a baking sheet and roast for about 40 minutes, or until they’re tender when pierced with a fork.
