Ingredients:
  • 4 large apples (such as Granny Smith or Honeycrisp)
  • 2 cups water
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cinnamon stick (optional)
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 envelopes unflavored gelatin
  • 1/4 cup cold water
  • Whipped cream, for serving (optional)
  • Ground cinnamon, for garnish (optional)
Instructions:

  1. Start by preparing the apple rings. Peel the apples and remove the cores. Using a sharp knife or a mandoline slicer, slice the apples horizontally into rings, about 1/4-inch thick.
  2. In a large saucepan, combine the water, 1 cup of granulated sugar, lemon juice, and cinnamon stick (if using). Bring the mixture to a boil over medium heat, stirring until the sugar is dissolved.
  3. Reduce the heat to low and carefully add the apple rings to the saucepan. Simmer gently for about 5-7 minutes, or until the apples are just tender but still hold their shape. Be careful not to overcook them. Remove the saucepan from the heat and let the apples cool in the syrup.
  4. While the apples are cooling, prepare the creamy custard. In a medium saucepan, combine the heavy cream, milk, and 1/2 cup of granulated sugar. Heat the mixture over medium heat until it is warm but not boiling, stirring occasionally.
  5. In a small bowl, sprinkle the unflavored gelatin over 1/4 cup of cold water and let it sit for a few minutes to soften.
  6. Once the gelatin is softened, add it to the warm cream mixture and whisk until the gelatin is completely dissolved.
  7. Remove the saucepan from the heat and stir in the vanilla extract. Let the custard cool slightly.
  8. Arrange the cooled apple rings in a single layer in a shallow dish or individual serving bowls.
  9. Carefully pour the warm custard over the apple rings, covering them completely. Use a spoon to smooth the custard if needed.
  10. Cover the dish or bowls with plastic wrap and refrigerate for at least 4 hours, or until the custard is set.
