- ¼ cup tomato ketchup
- ¼ cup brown sugar
- ½ teaspoon salt
- ¼ cup vinegar
- 1 teaspoon cornstarch
- ¼ cup water
- 2-3 small bell peppers (assorted colors), cut into strips
- 1 medium red onion, cut into 1” cubes
- 1 cup pineapple chunks
- 10.5 ounces fish fillet (like cream dory), cut into 2x2-inch or 2x3-inch pieces
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon white ground pepper
- 2 tablespoons lemon or calamansi juice
- ¼ cup ice cold water
- 1 medium egg
- ½ cup flour
- ½ cup cornstarch
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon baking powder
- ¼ cup cornstarch
- 1-2 cups canola or corn oil (for deep frying)
- Prepare the Sauce: In a bowl, mix all sauce ingredients. Set aside.
- Prepare Vegetables: Cut bell peppers, onion, and pineapple. Set aside.
- Marinate Fish: Season fish slices with salt, pepper, and lemon or calamansi juice.
- Heat Oil: Heat oil in a wok or deep pan over medium heat.
- Prepare Batter: In a bowl, sift together flour, cornstarch, and baking powder. Add salt, egg, and cold water. Whisk into a smooth batter.
- Check Oil Temperature: Oil should bubble immediately when a chopstick is dipped in it.
- Dredge and Fry Fish: Dredge fish fillet in cornstarch, then dip in batter. Deep fry in hot oil until golden brown.
- Cook Vegetables: Empty oil from the wok. Add 1 tablespoon oil, then cook onions, bell peppers, and pineapple.
- Simmer Sauce: Pour sauce into the wok and simmer until thickened.
- Combine and Serve: Add fried fish fillet to the wok, toss until coated with sauce. Transfer to a serving dish.
