- 1 lb pork tenderloin, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Cooked rice for serving
- In a bowl, coat the pork pieces evenly with cornstarch.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the pork pieces and cook until browned and crispy, about 4-5 minutes per side. Remove the pork from the skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the chopped bell pepper and onion until they are tender, about 3-4 minutes.
- Return the cooked pork to the skillet, along with the pineapple chunks.
- In a small bowl, mix together the ketchup, rice vinegar, brown sugar, and soy sauce. Pour this sauce over the pork and vegetables in the skillet.
- Stir the cornstarch-water mixture to recombine, then add it to the skillet, stirring well to combine with the sauce.
- Cook everything together for a few more minutes until the sauce has thickened and the pork is heated through.
- Season with salt and pepper to taste.
- Serve the sweet and sour pork over cooked rice.
