Ingredients for Sweet Corn Fritters:
- 1 cup of corn kernels (fresh or canned)
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped green onions
- 1 egg, beaten
- 2 tablespoons milk
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying
- 1 ripe avocado, diced
- 1 small tomato, diced
- 1/4 cup finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
- In a large mixing bowl, combine the corn kernels, flour, chopped green onions, beaten egg, milk, baking powder, salt, and pepper. Stir until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the corn mixture into the hot oil and flatten slightly with the back of the spoon.
- Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
- In a separate bowl, combine diced avocado, tomato, red onion, cilantro, lime juice, salt, and pepper to make the avocado salsa. Mix gently until well combined.
- Serve the sweet corn fritters hot with a generous scoop of avocado salsa on top.
