Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 2 sweet potatoes, peeled and diced
- 1 can (400g) black beans, rinsed and drained
- 1 can (400g) diced tomatoes
- 2 cups vegetable broth
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper, cooking until softened.
- Add the sweet potatoes, black beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for about 30 minutes, until the sweet potatoes are tender and the flavors are well combined.
