- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 sweet potato, peeled and diced
- 1 cup dried green or brown lentils, rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups spinach or kale, chopped (optional)
- Sauté Vegetables:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until softened, about 5 minutes.
- Add carrots and celery, and cook for another 5 minutes.
- Add Sweet Potato and Lentils:
- Stir in the diced sweet potato and rinsed lentils.
- Add Tomatoes and Broth:
- Pour in the diced tomatoes and broth.
- Stir in cumin, paprika, turmeric, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until the lentils and sweet potatoes are tender.
- Season and Serve:
- Remove the bay leaf.
- Stir in spinach or kale if using, and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste.
