Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 sweet potato, peeled and diced
  • 1 cup dried green or brown lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped (optional)
Instructions:
  1. Sauté Vegetables:
    • Heat olive oil in a large pot over medium heat.
    • Add onion and garlic, and sauté until softened, about 5 minutes.
    • Add carrots and celery, and cook for another 5 minutes.
  2. Add Sweet Potato and Lentils:
    • Stir in the diced sweet potato and rinsed lentils.
  3. Add Tomatoes and Broth:
    • Pour in the diced tomatoes and broth.
    • Stir in cumin, paprika, turmeric, thyme, and bay leaf.
    • Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until the lentils and sweet potatoes are tender.
  4. Season and Serve:
    • Remove the bay leaf.
    • Stir in spinach or kale if using, and cook for an additional 5 minutes until wilted.
    • Season with salt and pepper to taste.
