Ingredients:
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 8 oz pasta (such as penne or rotini)
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Optional toppings: chopped green onions, diced tomatoes, shredded lettuce, sliced olives
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, cook ground beef or turkey over medium heat until browned. Drain excess fat.
- Add taco seasoning and diced tomatoes (with their juices) to the skillet. Stir well.
- Simmer for about 5 minutes, allowing the flavors to meld together.
- Reduce heat to low. Stir in cooked pasta, shredded cheese, and sour cream until well combined and heated through.
- Serve hot, topped with optional toppings as desired.
