Tamarind Glazed Prawns are a delightful combination of sweet, tangy, and slightly spicy flavors that make for an incredible dish. I tried making these recently, and the balance of the tamarind sauce with the juicy prawns is just perfect. It’s a quick and easy recipe, perfect for a weeknight dinner or as a showstopper for entertaining. Let’s get started!

Ingredients:
- 1 lb (450g) large prawns, peeled and deveined
- 1/4 cup tamarind paste
- 2 tbsp honey or brown sugar
- 2 tbsp soy sauce
- 1 tbsp fish sauce (optional)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp red chili flakes (adjust to taste)
- 2 tbsp vegetable oil
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Make the Marinade: In a bowl, whisk together the tamarind paste, honey (or brown sugar), soy sauce, fish sauce (if using), minced garlic, grated ginger, and red chili flakes. This will create a deliciously sticky glaze for the prawns.
- Marinate the Prawns: Add the prawns to the bowl and toss them in the marinade until well coated. Let them marinate for at least 15-30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Cook the Prawns: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated prawns, reserving the marinade for later. Cook the prawns for about 2-3 minutes on each side until they turn pink and opaque.
- Glaze the Prawns: Pour the reserved marinade into the skillet and cook for another 1-2 minutes, allowing it to thicken and glaze the prawns. Stir to ensure they’re well coated in the sauce.
- Serve: Remove from heat and transfer the prawns to a serving platter. Garnish with fresh cilantro and serve with lime wedges for squeezing over the top.
