- 2 tbsp vegetable oil
- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional, for extra heat)
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup beef broth
- Salt and black pepper to taste
- 1 tbsp tomato paste (optional, for extra depth)
- Heat vegetable oil in a large pot over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Add chopped onion, garlic, and bell pepper to the pot. Cook until vegetables are softened, about 5 minutes.
- Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute to toast the spices.
- Add diced tomatoes, kidney beans, black beans, beef broth, and tomato paste (if using). Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for 30-40 minutes, stirring occasionally.
- Season with salt and black pepper to taste.
- Serve hot and enjoy!
