Ingredients​

  • 2 cups vegetable or chicken broth
  • 1 cup mushrooms, sliced (shiitake or button)
  • 1 stalk lemongrass, chopped
  • 1-2 kaffir lime leaves (optional)
  • 1-2 Thai bird chilies, sliced (adjust to taste)
  • 1 tablespoon fish sauce (or soy sauce for vegetarian)
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions​

  1. Simmer the Base: In a pot, combine coconut milk, broth, lemongrass, and kaffir lime leaves. Bring to a gentle simmer.
  2. Add Mushrooms and Spice: Add sliced mushrooms and chilies. Cook for about 5-7 minutes until mushrooms are tender.
  3. Season: Stir in fish sauce and lime juice. Taste and adjust seasoning as needed.
  4. Serve: Remove lemongrass and lime leaves before serving. Garnish with fresh cilantro.
